Mini Strawberry Cupcakes with White Chocolate

With the winter almost gone and the fresh strawberries being back in the supermarkets I think it’s time for me to share this great mini strawberry cupcake recipe with white chocolate.

Mini Strawberry Cupcakes with White Chocolate

It’s really easy to make these yummy mini cupcakes, trust me. I am not very good at baking and also way too impatient. But they always come out well and they taste delicious!

For around 30 mini strawberry cupcakes with white chocolate you’ll need:

  • 300g flour
  • 2 tbsp baking powder
  • 150g sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 225ml milk
  • 50g butter, melted
  • 80g fresh strawberries
  • 75g white chocolate, chopped
  • 200g white chocolate coating
  • 100g icing sugar
  • 3 tsp red currant or cherry juice

Also you’ll need some of these super cute miniature cupcake paper forms.


1. Preheat the oven at 200°C

2. Mix the flour, baking powder and sugar in one bowl. Whisk the egg in another bowl and then add the milk, vanilla extract and the melted butter to it and mix. Then add this mix to the flour-baking-powder-sugar mix. Mix it all together.

2. Dice the strawberries and add to the mix. Then add the chopped white chocolate and mix everything carefully.

3. Put the mix in mini cupcake forms.

4. Bake the cupcakes for around 15-18mins in the oven until they rise.

5. Take the cupcakes out of the oven and evenly apply the melted white chocolate coating. Then let them cool down.

6. Mix the icing sugar with the red fruit juice. With this pink mix you can decorate your cupcakes. Tip: Put the mix in a freezer bag, cut one corner open and squeeze.

Et voila! Ready they are! 30 super delicious mini strawberry cupcakes with white chocolate!

Ok, ok, I admit it, I was too lazy to make the pink icing myself…instead I bought one of these ready-made coloured icing pens, muahaha!

I told you I am lazy with baking, don’t judge me!


English Roast Dinner

Today was the first time that cooked a typical English roast dinner myself. I ate it several times before, when my boyfriend and I were invited to his parents house for lunch, or once when we went to Toby Carvery. But I always thought that it is way too time consuming and too complicated to do it myself.

This Sunday though, we decided to make our own English roast dinner! It was delicious. And I took lots of photos for you while preparing, in case you want to try it out yourself!

My super easy English roast dinner

…consisted of beef (silverside roast) and roast veggies (potatoes, sweet potatoes, carrots and parsnips), with mashed swede and gravy.

(I cooked way too many veggies , considering that we were only two people… I guess I got overly excited :) That’s why I am not giving you any numbers on ingredients. A couple of veggies per person should do.)

For this English roast dinner you will need:


  • Potatoes, Sweet potatoes, Carrots, Parsnips
  • Swede


  • I chose Beef – Silverside Roast. It is easy for carving and also very lean.

Also you will need:

  • Gravy granule
  • Butter
  • Olive Oil
  • Salt, Pepper, Rosemary

The four easy steps to cook your roast dinner are:

1. Get the meat ready.

Pre-heat the oven to 200 C (Gas mark 7). Put the meat in a tray, oil it with olive oil and season with lots of salt and ground pepper. It then goes in the oven (in the middle) for 50 minutes (to cook to medium).

2. Prepare the veggies.

After placing the meat in the oven, peel and chop the potatoes, sweet potatoes, carrots and parsnips into some uniform pieces. Boil them for 10 minutes, until they are soft. Then place them in a big roast tray and drizzle olive oil on top and sprinkle some salt, pepper and a bit of rosemary. You can also add garlic and drizzle some lemon juice over the veggies if you want. Then the tray goes in the oven under the meat, to roast for around 30 minutes until golden brown.

3. Mash the swede.

Peel and chop the swede into small pieces. Boil them until soft (around 10 min). Then add some butter (and some cream if you want) and mash. Done. Whoa it tastes heavenly!

4. Gravy.

Well, I bought some gravy granule (from Bisto), as I am lazy. You simply bring half a pint (280ml) of water to the boil and add 4 heaped tsp of gravy granule. Then stir. Done ;) For thicker gravy add more granules.

TADA! That’s it! When the meat and the veggies are done, dish up immediately and enjoyyyy!!
